Chops n Apples

Seared sone thick chops in the cast iron then roasted indirect till 145 on the large. No pic of the CI sear. WTF is wrong with me?


Moved the CI over to the sideburner on the gasser for the onions and Granny Smith Apples 


Plated up. 


The apples and onions went crazy good with the pork.   Thanks for looking.

    @Mattman3969 In a few weeks I'll be cooking in my new wood fired oven. I'm sure I'll have plenty of burnt offerings to post as I figure it out. Y'all will get a kick out of that.

    Looks great-I'm sure the entire experience was enhanced by that diamond plate =).  Seriously, always a winner.  Simple and a banquet-about as good as it gets.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Nice looking meal, at least you take pics, I'm all thumbs when it comes to photography. One of our favourites is pork (loin, tenderloin, chops) with apples and onions and some apple butter BBQ sauce. Never thought of turning my square plate to make it a diamond, turns a $5 meal into a $10 meal, like putting a candle on the table.

    @Skiddymarker - You can't just "turn the plate".  You have get certification from @Mattman3969 regarding the proper procedure as every plate responds differently.  He may offer you the "secret hand-shake" or not.  
    Kinda like a diamond plate whisperer pedigree...  You may or not be so blessed.

    Matt: discovered this after the grandkids turned away from unsweetened applesauce. Lots of choices, but Motts came in the small container. This recipe is for the two of us. Last batch I used JD Fire and left out the cinnamon. 

    104ml applesauce 

    50ml organic tomato sauce 

    130ml unpacked brown sugar (65ml Turbinado, 65ml cane)

    12.5ml lemon juice 

    12.5ml JD Tennessee Honey (optional)

    25ml apple cider vinegar

    1.25ml salt

    1.25ml ground black pepper

    1.25ml cayenne 

    1.25ml smoked paprika 

    1.25ml Ancho Chili Powder

    1.25ml garlic powder 

    1.25ml onion powder

    1.25ml ground cinnamon

    Using immersion blender or whisk, mix everything until applesauce is liquified. Dump into a sauce pan, bring to a boil, let simmer for 10 minutes, stirring so does not burn. Cool completely before use or store in fridge. Will thickens as it cools. 

    Yields 200ml. 

    For a rich shiny glaze, add 30ml butter to the saucepan. If using right away, add the butter to the saucepan, sauté the onions, add the apples and the rest of the sauce, let simmer while you empty the rest of the Bourbon bottle. 

    This is very good with sautéd onions, apple slices and served over sliced BBQ pork roast or tenderloin or chops. 


    @lousubcap- I knew this diamond plate thing was complex, I just had no idea how complex - maybe that's why I plate on a plain Jane Corelle round plate - every side is up, or maybe down!
