Brethren,
I made it down to Fredericksburg, VA, yesterday packing two empty iced coolers and picked up five prime briskets. They looked amazing. Dry brined one last night with salt, then this morning put on Meathead's Big Bad Beef Rub. I also swung by Restaurant Depot and picked up some beef ribs, and salted and hit them with a mix of AP rub, Spicy BBQ Rub, and some Steak and Chop Rub, all from Killer Hogs. Everything turned out great. For the first time...ever...had a sliced piece of brisket from the flat pass the bend test.
It will be *very* hard to go back to non-prime brisket. I may have to buy a chest freezer and stock it up before Costco stops carrying the prime packer cuts (end of May, right?)...

Looks great! Nicely done sir.

I cooked a Costco prime for my neighbor on Sunday.
Wrapped it with paper from Tom at CGS. My neighbor said best brisket he has ever had.
So I see wrapping in my future!!
