Let's revisit the Philly Cheese-steak.....I have been exposed to great JOY....

Mark @Sea2Ski gifted me (Butt Blast) some local ingredients for these morsels of delight. Some Amoroso' Rolls, Sirloin Tip Beef Steaks and a White New Yorker Cheese. The night I returned home, I made myself one in a fry pan, and wow. My wife and I had them the next night as well.
I went out of town and returned for a weekend at the ball park....for a big SEC series. Out I bring the Blackstone on Friday evening, and it is on.

A beautiful evening with a nice breeze blowing....Flags were a flapping and there was the smell of cheesesteaks in the air.

I probably deviate a bit from an authentic sammie....I added some hot banana peppers to the mix....cause, well I had some and I like them.

All gettin happy together for the final.....

Leveraging the Amoroso's further on evening two, I whooped up some Italian Sausage sammies. I didn't do such a good job with pictures.....only snapping this one as it did happen. Mark thank you so much...for the great eats. I absolutely enjoyed my self this weekend....well except 2 of the 3 games. I am sure @bgebrent or @yukonRon will be along shortly to fill you in on the two L's we got at the hands of Kentucky.

Oh and it wouldn't be baseball season without ballin up some peanuts.

@Jeremiah we open the boat this upcoming weekend. The following I am off on a trip and when I come back, I am going to be fishing a lot. Basically every weekend till October. But I bet it would be a great trip down there that time of the year!--------------------------------------------------

Where do you guys get your steak for these? I asked my local Kroger butcher if they could slice me some steak thinly for Philly cheesesteaks and he informed me they didn't have a slicer in the meat dept. I couldn't even find decent frozen stuff in the frozen section. I suppose I could chill (till nearly frozen) some steak and try to slice it myself, but am wondering if there is a better source out there. Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I took a part day tailgate on Sunday (can't hang). Left the Gen with him. Got a text around 4:00 saying it ran out of gas, and would I come back an fill it for them.

Up here you can buy it frozen at several commercial grocery chains. Also most meat shops/butchers have several lbs sliced and ready to be sold for cheesesteaks ready to go in the case. Usually it is sirloin tip, but any decent cut of beef can be used such as strip or ribeye. The best way to do it yourself is a slicer, but if you have the patience and a damn sharp knife, by hand would work. Really not sure Robin. It is New Yorker White American. By itself, it is nothing special at all; however, when you factor in the flavor, melting qualities, moisture and texture at cocking time and after several minutes in the sandwich, I think it is the perfect cheese for it. (I do not want to get into a "wit wiz" discussion at this point either for those in that camp).northGAcock said:
