Sous vide Char Siu pork...

Tandoori chicken...

moved to indirect zone to come to temp after charring...
(still have half DIY reducer ring of lump left after cooking char siu, roasted eggplant and three batches of tandoori chicken legs. @monstead you can see why I love my XL!)

with massaged kale salad, potato curry and roasted eggplant curry...

also cooked four 90-sec pizza's in modified uuni 2s oven with 3-day cold proofed dough...

@lkapigian Thanks, it's kind of convoluted using imported kebab spice and spice not easily available in US. If you google on "tandoori chicken caliking eggheadforum.com" you'll find many previous discussions on tandoori technique/recipes etc. Essentially it's dry tandoori spice (commercial or DIY), garlic ginger paste, oil/mayo, yogurt.

I've got to try that char siu. My one attempt on the egg was decent , but not great.
And you may be keen to know that I may have finally nailed the perfect naan dough and technique. More on that later

Leftovers fusion....2 week old "aged" double smoked bourbon praline ham, mac n cheese, and Haldiram's bhujia.
Cheesy, creamy, salty, sweet, crunchy, spicy.....panko is a joke.

@caliking can't wait to see your naan report. I tried naan in the uuni oven but it puffed like a balloon and the top turned into char instantly
Plan to try again with a dough docker or something redneck/diy to prevent the puffing. canuckland -
@Focker good use of bhujia right there! A stupid simple snack for me is squirting some spicy kethcup on some bhujia in a bowl. Kinda like ketchup on fries.
@Canugghead - i need to sort through a bunch of pictures and organize my thoughts, then i'll post a thread soon. I just dock the dough with a pointy knife and it does the trick. The naan bubbles up in spots like it should, but doesn't become a puffy balloon.

Will have to try that. I absolutely love this stuff. My friend introduced me to it by slicing some red onions, tomatoes, and a squeeze of lemon, bhujia on the side in a bowl....so simple, but so good. Perfect app, made the scotch go down faster.
Loved seeing his little boys smile and mouth watering while eating it in his chair. I think it may be a little too hot for my son, we'll work on it.BrandonQuad Cities
