Com Ga Hoi An - Vietnamese Chicken Rice (with pics)

Inspired by the pho stew made by @fishlessman and my love of Vietnamese food, I decided to make some chicken rice. I used a traditional recipe for Com Ga Hoi An, you could probably do this with left over chicken from a BGE cook (yeah I know, what's leftovers?), just stick the bones/carcass into the stock pot along with chicken pieces. Seriously tasty.

The chicken was corn fed free range, giving a yellow colour to the skin/fat and then the rice:


There was enough left for a few breakfasts ... pretty healthy stuff:

    Cheers, tastes as good as it looks. VN food doesn't lend itself to Egging, although the next one I'm trying is an Egg translation of vit nau thom, which is braised duck and pineapple.
