I finally got around to trying the chicken and veggies dish, with veggies in a pan underneath the chicken thighs. Veggies have rosemary, salt, and pepper. Thighs have salt, pepper, Dizzy Dust, and a touch of Adam's citrus rub. Doing 350 indirect, I guess 1+ hours.
Question - will I need to turn the thighs or not?

You can do it either way, but I would flip. It will give you a more even end result. Good looking cook, but I agree on adding more dust.

I don't think flipping will make much difference since you're going indirect, but it won't hurt anything.Jefferson, GA

Yes, I flipped them about 3/4 of the way through. They were on just under an hour, temp was around 375 for most of it. Pulled them between 170-180, but they were still juicy.
The skin was crispy, and the potatoes were soft. The carrots were not real soft, next time I may put the veggies on about 30 minutes early. Taste was good, and the family was complimentary. Successful first try, thanks for the help! Took one bite before the pic...
