Meaty spare ribs. So good

Picked up a extremely meaty slab for $12. Rubbed with honey hog and onto the egg.
They were the most perfect ribs I have not only made but cooked as well. So meaty and juicy.

Two questions:
1) Did you sear the ribs before slow-cooking them?
2) I see foil under the ribs in one shot. Is that directly on the plate setter, or on something set upon the plate setter...or something else? -
