Seafood Paella, or rather, Lobster Paella

Yeah, so I had a dinner party last Saturday and this is what I threw together, Ha Ha.

I gently egged up some nice lobster tails brushed with butta on the small before my guests arrived...pulled them just short of cooked through~




After everyone arrived and had wine in their glasses, I served up some duck breast over arugula on the balcony~



Then some gazpacho along with some manchego cheese drizzled with honey ~ yep, it's a lil blurry but the wine couldn't possibly be to blame!



Then with the paella pan on the large Egg, direct, but sitting on 2 fire bricks, I sauteed up onions and garlic, added Spanish chorizo and tomatoes and next, valencia short grain rice which got all toasty~



I added in the seafood stock let the rice cook for 10-12 minutes... then added in shrimp, scallops and mussels, and I let that Egg on for about 8-10 minutes more, lid down, til the rice was just al dente. I put the lobster tails on top to just barely reheat and finish cooking through.



I rested it a good 15 minutes under foil, then I served it along with the 1905 salad recipe from the historic Columbia Restaurant in Tampa - http://www.columbiarestaurant.com/The-Columbia-Experience/Recipes/1905-Salad



It was a special occasion and my guests loved this meal, but I think I screwed myself for ever having them over for dinner again!

  • @Carolina Q - You wouldn't even have to eat the raw oyster, I would grill it for you.  

    For the dressing, which I have been making foreva, I tweek it using 1/4 cup plain white vinegar, and I add the worchestershire and lemon juice into the dressing, also adding some olive "juice" from the jar when tossing.

  • @Eggdicted_Dawgfan - trust me, there was wine! Look closer on the last pic and you can see 2 glasses of red wine. We even had dessert wine with the rum cake I made... no pics of that, though.

    What a banquet across the board.  As above, you win the internet. It takes a lot of dedication and effort to pull that off.  Most eggcellent.

    We were in Clearwater last week and dined at Columbia Saturday night. The salad, paella, booze, and bread pudding were all very good. Told my wife we should try paella on the egg.

  • @DA_14   Did you go to the Columbia on Clearwater beach? The original restaurant in Ybor is definitely worth a visit. I just had lunch there last week.
