Scored a deal on a Boos cutting board

I happened upon this while at an auction night to benefit the school my son attends.  It was a silent auction item and I noticed that not many people had bid on it.  The time left to bid on the silent auction items was almost over, so I put in a bid and got it for $55.  I thought that was a pretty good deal!  It's 18x18 and weighs like 15 pounds.  It came with the scrap tray, a double-bladed cutter thing, and a bottle of rub for the wood.

Thanks for the info!  Another question, probably a dumb one, but what is the purpose of that bowl-shaped indentation on the bottom side of the board?

The concave section of the board allows you to rock the mezzaluna back and forth, mincing garlic, herbs, etc.

Make sure to keep the board humid with oil (such as Boos Mystery Oil). It will be very thirsty initially. You will also want to apply a beeswax-based product such as Boos Board Cream or Clapham's Salad Bowl Finish periodically.

Read and follow Boos' directions for best results.

Thanks!  Will regular mineral out work instead of Boos mystery oil?  The Boos oil is pricey!

But you should still employ a beeswax product as well. The oil keeps the wood humid while the beeswax-based product provides for a protective finish.

The BOOS rub seems pretty reasonably priced on Amazon.  I'll probably go with that and a less expensive mineral oil.  Thanks for all the tips!
  • No worries. In the last year, I've amassed a few nice boards (including a three inch thick end grain Boos Block as well as a beautiful end grain cheese board made by my uncle), so I've tried to bone up on maintenance and follow instructions to a tee.

From your reading of the Boos instructions, I'll emphasize just one thing - take food items off the board as soon as cutting is complete. I left a small pile of cilantro about 10 mins after cutting and green bled into one small spot on the board. The food can permeate and stain faster than you'd think. Again, the beeswax will help counteract this.

Enjoy your board and treat it well! It will pay you back with years of service.

My only beef with this forum is how easy it is to mistakenly punch the wrong feedback buttons.

This happened to me with a tomato that "juiced" onto the board and left a dark spot. I'll need to sand the board soon to refinish the cut lines, so that will hopefully take care of it.

I avoid any political and religious threads so when someone seems to disagree with me or says my reply is off topic then I'm curious what I said may have offended them. I'm the type of person that if you have a beef with me then I'd appreciate talking about it. OTOH if it is a fat fingered mistake then how about undoing it? That's all I'm trying to say! =)

Great score!  Make sure to use food grade mineral oil.  Let it drink as much oil then set aside fro several hours.  Wipe excess and the beeswax the board..  Wipe board down with a wet towel when using.  That will help keep the board clean.
