Meatloaf hash...wow, just wow.

Inspired by a previous post, I decided to make meatloaf hash out of the last of the leftover grilled meatloaf.
I shredded a small potato and sauteed it in olive oil with bell peppers, jalapeno peppers, onions and diced tomatoes, then added the chopped up meatloaf and a dash or two of hot sauce and plenty of black pepper. Browned it all nicely in a 70 or 80+ year old cast iron skillet that used to belong to my grandmother, and the hash turned out even better than I had imagined.
Since I have to cut back on carbs I only used one small potato, but this could have been better with more potatoes, yet it was still stupid good.
I wonder how this would have turned out on a griddle?...almost as good as the cast iron I am guessing.
