Stupid brisket question

I see lots of brisket flats in the stores along with the whole packers. So what happens to the points when they prep the flats? I wonder why you can't buy points just like you can buy flats?

    It's not directly related to plain briskets, but on corned beef I see that the flat and the point are both available in my local store. The majority of stores only carry the coned beef flat cut.

    I might be way off base here, but I suspect the flats look leaner and more, presentable in the meat cooler. I bet the points end up in the grinder.

    The other day at Kroger I saw they had points and flats selling separately. It was the first time I ever saw it sold like that.

    What is the best beginner cut / cook for brisket? I don't want to ruin 15 lbs of meat! My butcher will cut whatever I want and suggested doing a point on its own to start with.

    @Eoin I would go with a point as it has a much higher fat content thus a much broader finish-line target.  If you score a point I would run it until it is around 210-215*F to ensure you get a good fat rendering.  The traditional "probes like buttah" brisket finish-line feel applies to the flat as the point will get to that texture well before you have the fat well rendered.  FWIW-
    Edit:  I agree with @skiddymarker that the points end up in the grinder.  At least I have been told that by a few butchers.
