Any recommendations as to what I should use to protect the wood my surround table is made of?

Actually, both. If there is a finish that cannot take the heat, I need to avoid it.

Marine Spar Varnish will last you a long time. I'd recommend 2 coats though 3 are better. Just follow the manufacturer's recommendation of time between coats.Re-gasketing the USA one yard at a time
