Best way to cook these ribeyes

I have some 1-1/2" ribeyes I'm planning to cook on the large egg today. They're wanting them medium to medium well. I've never reversed seared(still new to the egg world.). So wasn't sure how to achieve the perfect steak with this thickness. I've done a lot of smaller NY strip steaks, but this will be the first thick ribeye. Comments

So what temp do I cook at, at first? platesetter legs up or down? And when should I pull to sear? I usually like mine medium rare but they're wanting medium

Reverse sear will work. Go indirect at 250-275 until you get to an internal temp of 130, since you want medium. Then, pull the indirect piece and raise the temp to 500-600 and sear each side for 60-90 seconds a piece.

Also, if you like any smoke on your steak, you can add a chunk of oak or something during the indirect portion.

Best way to cook? at my house.... lol I'd go reverse sear as well. Try shooting for medium as medium well would be a crime with those steaks. Maybe your guests will be pleasantly surprised.

if you want them medium to medium over cooked, then just direct will do ya. You'll be able to get a great sear.. shoot for 500 ish on the dome.
Dont bother will all the moving the crap around, cause you wont be able to get any gradient of color at those temps worth caring.-FATC1TY

Did my first reverse sear. They were INCREDIBLE! Won't do it any other way with steaks this size ever again.
