Cold smoking ideas

I'm about to receive the Amaze-n pellet/sawdust smoking tray I ordered. This particular model is recommended for cold smoking.
This will be my first foray into cold smoking and I am looking for ideas aside from meats (because of the health risks associated with the latter).
Was thinking I'll do cheese (the obvious choice), but would also like to try other items - maybe veggies, smoked salt to be used as a seasoning, etc.
Any recommendations for safe cold-smoked items? I'd love to hear them.

I love smoked almonds. I buy roasted unsalted and toss in a bit of butter and seasonings.Wisconsin, lbge, MM, kab, pig tail flippers, bear claws, and more rubs than I will admit to.

Cheese, salt, water are my automatics. The water is for ice cubes (bourbon, bloody marys etc)
@Chubbs suggested ketchup the other day, which I'm looking forward to trying.
