Picked up one of these bad boys with some left over Christmas money... Came in on Thursday. First use was today.

I got a 2# beef Top Round this morning, threw it in the freezer for 45 minutes or so while I got all my beef jerky stuff together, and I was making 1/8" (or less) slices like a boss on the first draw. SUPER easy and consistent.
Never knew about granton edges before, but now I'm a believer!

Different brand, but similar just the same and yes that knife is awesome! As long as you don't take it camping and try to cut firewood it will stay sharp and work great.
Mine is several years old now and slices meat like a hot knife through butter!

Are you in KC, just guessing by your pic? Not on my computer so can't see your sig line.
If so, check out ambrosi bro's cutlery downtown. They sharpen and sell all the knives to restaurants in the city. You can go get old used knives from places like Hereford house, Arthur Bryant's ect. For 5-15$. Or new ones.
