Blood Oranges

I saw them on special at Walley World and picked up a bag that contains 8. Any ideas for a marinade or other recipe using said fruit?

Glaze for ham. I've developed several recipes.
Or
Juice it + some cubed fruit and Cointreau reduced for salmon.
Or just peel and eat

I love blood oranges. I've seen a recipe for a vinaigrette salad dressing with blood oranges that looked good, but I've never made it.

My local specialty olive oil / balsamic vinegar shop makes brownies using blood orange infused EVOO in lieu of the regular veggie oil. Best brownies you'll ever put in your mouth. I'm sure you can infuse standard EVOO somehow with what you got.

Slice a few (2) heads of fennel the thickness of cabbage for coleslaw.
Drizzle with olive oil to lightly coat fennel.
Add salt to taste and a crack or two of pepper.
Set aside 30 mins.
Slice rind off blood orange, then slice from "Top to bottom" of orange making 1/4" slices. (Optional: You can then cut those slices in half.)
Add orange slices to fennel.
Serve immediately.
Eat.
As simple as you can get and delicious.
