Two Butts On For The Firehouse Tomorrow

My Son in law is a Dallas Fireman. He brought over a couple of butts, to smoke on the BGE, for the Firehouse tomorrow. We will do these at 300 with Pecan smoke.
Take off at 198-205 IT. Rest an hour and then go ahead and pull, pan, cover and chill in the fridge. Pickup is 5:45 am.

They will be eating well tomorrow.

    SIL Jason came by and pulled and prepared the little one. Little one is in the fridge. Big one is an hour or so out. Then hour rest.
    All is good.

    So I asked Jason if they had a true chopping board. Do you have a couple of big cleavers? Again, yes. So I mention to try some true fine chopped pork on toasted buns with a BBQ sauce mixed with a splash of vinagar and topped with dill pickles.
    We will see which they liked best. Pulled or chopped!

    @hotch that's a nice thing for you to do. I my self prefer the chopped. I think it helps distribute the bark more evenly throughout the sandwich.

    @texaswig Scott I agree. I just don't have a good block to chop on. One more item on my list of "get stuff".
