Baking Steel Pizza Stone

First pizza run on our new baking steel stone. We were pressed for time last night so we opted for our favorite local take and bake shop, LarryO's. They always make a great pie that has presented and cooked well on the BGE using a conventional stone.

All in all very pleased with the steel and the results. I still need to adjust my times from the conventional stone as the steel does heat up and cook FAST!

I was only running around 575 (I often hit 700+) and this thing was done in less than 6 minutes!

Very tasty! Looking forward to a fully homemade pie using 00 flour this weekend!

    Actually, it is the baking tray that the pizza is placed on when made...this is a take and bake. Instructions regarding tray are:

    "Do I leave the baking tray on when I cook my pizza?

    Yes, the baking tray helps the pizza cook evenly and also helps you carry the pizza from the oven to the table."

    I've cooked many, many pizzas on my egg, take and bake and fully homemade...this was just the first one with steel. Using the tray does develop a perfect crust with the take and bake only...I've tried it with and without.

    I use a pizza screen, if you're using parchment paper try a screen...you'll never consider parchment paper again!

  • I use the ole papa murphy's quiet a bit. Can't beat a $5 large pepperoni pizza on Tuesdays. I do use the paper plate, to start and then transfer about 4-5 mins in when the crust is starting to set.
