Cornish Game Hens and Roots

Well it's been a while since I have posted something that didn't involve anus or deleting members around here, so here is your Wednesday plate.

Spatchcock Cornish game hens with root veggies (carrots, sweet and russet potatoes, turnips, onion...I forgot the beets) and a kale salad.  

Hens spatchcocked with salt, pepper, and dizzy original and an apple/apricot jelly glaze with cayenne, paprika, and lemon juice.

    They look great.  I'm just curious, are kids more into Cornish hens than regular chicken.  My kids love legs and thighs.  I'm not sure if my 12 yo daughter would say "Yeah, baby chickens", or "Ewwwww, baby chickens".

    @gmac always a solid response. 

    @thetrim I feel like she (at 2 1/2) has a very healthy understanding of life and death for her age. I take her to the park to feed the geese and ducks and she also sees me clean them so she is starting to grasp that we respect them but we also need them. I'm thinking about 4 we may do a chicken coop to give her a better understanding. 

    I got a sheltered explanation growing up (stay at home California mom and Mississippi dad who worked a lot) so by the time I was spending summers on grandpas farm I was drinking from the firehose. 

    I would suggest explaining them as "white Plymouth Rock chickens coated in BBQ sauce. And finish your chickens and we will have cookies!!"

    Great looking spread right there.  I haven't made baby chickens for my daughter (1 1/2) yet, but she does love the adult ones.

    @TideEggHead I do my birds raised direct at 400. Same as chicken. I'll take it down just a hair for wild game with less fat. 350-375.
