My Axis deer finally showed up from the butcher! I usually do my own but I was in Texas and flying so I have been frothing at the bit for this to show up. 

60 lbs of venison. We will feast this weekend!!

Shout out to Hibler Taxidermy in Kingsville TX. The packaging and cuts look solid.

  • @MaC122 Axis deer aren't like whitetail and lose their spots after they are fawns. (These are from India originally I think. There are a bunch in Texas. Guys breed them in high fence and release them and they do pretty well down there.  The males and females both keep their spots and they have a dark black strip down their back)

  • Ugh, I finally found a coaster for my beer. Made some meatballs tonight for spaghetti. This stuff is killer. 

    I will do a backstrap cook this weekend with pics.

    Have you ever eaten one of those red stag?  Have a friend that gave me some of that. They smell horrible. Pretty tough, too.

  • @Biggreenpharmacist not even comparable. This stuff ate like beef. Everyone swore to me it was the filet of the wild game world. It is not disappointing. I would say it tastes more like buffalo than venison. 

    Red Stag is like...just terrible. Like antelope. Like sear it. Try to feed it to the dogs and go get Taco Bell. I don't care for it.

    A sweet, innocent, harmless, leaf-eating, doe-eyed, little deer?

    Let me guess: the deer was prancing along, got thirsty, spotted a brook, put his little deer lips down to the cool clear water and BAM! A bullet ripped off part of his head.
