Smoked turkey breast question

Been reading through some of the recent threads and just curious if tenting with foil is good idea to protect from any blackening of the skin? Going to do my first turkey next for a small gathering and hopefully don't jack it up. Not sure if I will brine or not, as I've never brined anything, but planning to cook a 7-8 lb bone in breast in the 325-350 range.
