It smells like FREEDOM!
Pork butt going on soon to make PP tacos this evening. Rolling with Apple wood chucks and some pecan chips for subtle accents and wood notes.

My wife wanted ribs. It snowed last night here in Chicago.
But 5 inches? No problem. (That's what she said.) The sidewalk can wait.
So I'm making ribs. Mustard base, Dizzy Pig Swamp Venom rub.
Back ribs are on.

I injected one yesterday w/some mojo and it's sitting in a vacuum seal bag now in the rest of the marinade. I was going to cook it today, but wife made a big pot of chicken tortilla soup yesterday and we're a bit overrun w/other solid leftovers, so I'm gonna let it stew another day and smoke it tomorrow. I was going to use some of it to make a red pozole, but that's how I felt yesterday. We'll see how I feel tomorrow. Or Tuesday.

Last fall saw an incredible deal on St Louis ribs - came out of the freezer yesterday. 4 chunks peach one chunk hickory - agree love smoke in the morning!

In the oven now... Didn't want the Staub to get all black... Only problem is the cover doesn't fit... Have it covered with HD foil.

Safe spaces and coloring books don't do it for me, but the smell of charcoal burning is certainly MY happy place.
I have been know to cook something even when not hungry just to go through the ritual. Man, that makes me sound like I need help...

Gotta be honest here, while we are making tacos tonight, there's going to be way more pork than we'll need. The beauty of having the food saver is that you actually *want* to have enough for leftovers. We use PP for a lot of things, so I never really need much of an excuse to do a butt.blasting said:
