First Shot at a Prime Packer

Local Costco has had Prime Packer Briskets lately, which is fantastic.  So I fired up the egg at 0345 this morning and had this on by 0430.



I cut off about 5 inches of the flat to cook later (chili or whatever) so after trimming I'm guessing around 10 lb.



I used this along with kosher salt and pepper.  I really like this stuff on steaks and other beef so thought I'd give it a try on brisket.  Used to get it at the local meat mkt. but they quit stocking it so Jeff Bazzos (Amazon) came through.



About 3.5 hrs. in, dome is at 285, but Maverick is at 235.  Calibrated the dome thermometer in boiling water last night and it's fine.  Going to just run with it like it is.  More to come later.

    Looking good. I have been eyeing the packers at my Costco lately and thinking I am going to pull the trigger for a Christmas meal. I will be curious to see how long it takes yours to cook so I can plan my meal. Might have to have Santa put it on for me when he drops presents!

    Probing wonderfully and going to the FTC.  9 hrs and avg. temp of around 190.  I had to sneak a little tasting slice of the corner, yummy.

    FTC'D 2 hrs. while I got the leek/Gruyere au gratin ready with some asparagus.  The flat was a little dryer than I wanted, think I could have maybe pulled it a little earlier.  I'll definitely be picking up another one of those at Costco in the near future, maybe 2 just for insurance, in case they quit stocking them.

    Great result right there.  Congrats.
