Lucky Brisket for Dallas Cowboys Sunday!

So... I'm almost married into a whole family of Sh!ttsburgh Steelers fans... and my Cowboys have them on the menu tomorrow.. so we are having friends and family over...

Grabbed a 12lb Choice Packer from my favorite place in Carrollton Va.. I'm going to throw it on tonight around 1am or so.. or whenever Conor McGregor knocks this other guy out and I get back home from the fight party.




Going to Smoke it with Hickory, Oak, and some cherry chips in hopes of help on the smoke ring for appearance sake. I'm thinking 250 degrees overnight until she probes like butta.

Rubbed with 50/50 salt and pepper, little BBQ rub and some onion Powder 



Injected with mostly Beef Broth with a splash of Stubbs beef marinade.. wrapped her up nicely and in the fridge until it's time to cook.

For Sh!ts and giggles.. you guys prefer fat side up or down?

    @EggSmokeVa. Rowdy Squeeler fans are the worst, dem Jags don't know when to quit wit der Yinzer talk.  Hopefully you have a good time with them, but regardless the brisket will keep you in good company!

  • Woke up this morning to find my pit somehow has gotten way to hot... up to 320 degrees... no idea how with the guru setup.. first time running into this challenge... couldn't have been that hot all night tho because brisket IT is only 160... as most of you know.. getting the egg temp back down is a bear...

    any pro tips on how to quickly get a 70+ degree drop and stabalized? I removed the guru and manually closing dampers to lessen air flow..

    You can add a metal bowl of ice to the BGE but that would likely require removing the protein.  But if you can add ice (in a metal container) around the brisket that will provide a heat sink for a while.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.  
  • I'll do that now... I poured a bit of ice water into the drip pan... probably gonna create more steam than I'd want but it was a reflex move... I'll dry the ice bowl too

  • I've managed to get temps down around 280... still too hot for my liking.. brisket seems rather unbothered but I won't know until it's done what I've got on my hands.... first time my guru hasn't been flawless so I can't be mad.. time to put in some manual labor and love this thing to the finish line lol

    It's fine. It want there that long. You clearly have an air leak or you need to shut your intake on your cyberQ down a little more. I run 1/4 open or it gets too much air and I can;t keep the temps down.

  • Also- I learned this on here a few weeks ago- If you take a 1/4 cup of water or so and pour it directly on the lump, the temps come down immediately. Only took me 10 years to figure that out and somebody had to tell me.

    As long as you nail the finish-doesn't matter much how you get there.  Go with the feel and you will be justly rewarded.  Enjoy the remainder of the cook.

    Nailed it-congrats on a great result.  Upon further review, I'm guessing based on the additional Q rig listed in your sig that this isn't your first brisket rodeo.  Regardless, that is a thing of beauty.  Most eggcellent.
