Tips for cooking Oysters on BGE?

I have some fresh oysters and would like to cook them on my xl. Never cooker any before on the egg. Any suggestions or tips?

    Drago’s Style Charbroiled Oysters Recipe

     

    The Sauce:

     

    1 Stick Unsalted Butter, very soft

    1 Pinch Kosher Salt

    1 tsp Freshly Ground Black Pepper

    1 Tbsp Minced Garlic

    4 Tbsp Pecorino Romano

    1 pinch Cayenne

    1 pinch White Pepper

    1 Spritz Lemon Juice

    1 tsp Minced Italian Parsley

     

    Whisk together all ingredients.

     

    For the Oysters:

     

    1 Dozen Large freshly shucked Oysters on the half shell (preferrably Louisiana)

    1 Recipe of the Sauce, above

    Pecorino Romano to finish

    Minced Italian Parsley for garnish

    Fresh Bread

    Lemon wedges

     

    Mix together all of the ingredients.

     

    Heat a charcoal or gas grill until very, very hot. Place the oysters on the hottest spot on the grill and let them cook in their own juices for a few minutes, just until they start to bubble and the edges curl. Top each with a generous portion of the sauce, enough to fill up the shell. When the sauce starts to bubble and sizzle sprinkle each oyster with about a Tbsp of Pecorino Romano. Let the Oysters go until the sauce on the edges of the shells gets nice and brown. Garnish with minced Parsley.

     

    Serve while still sizzling with Lemon wedges and fresh bread.

     

    Note: The more sauce that oozes onto the plate the better for mopping up with the bread. Also, don’t be as foolish as me and just make half a dozen, 3 dozen is more like it.

    I shuck them and grill them on the egg.  They only require 2-3 minutes at 350-400.

    You can get lazy and let the BGE do the opening.  Give this link a look when you can:

    I love them raw but sometimes I like to change them up (especially when you get in those questionable months and they get big and grainy and a lil stench to 'em)

    I have a bar down the road that did a sprinkle of chicken wing dry rub, hot wing sauce, and crumbled bleu cheese and grilled them then did a very light drizzle of ranch on top. They were surprisingly good.

    Split em, keep the lid open, lots of butter, garlic and parsley and hot and fast!!! Toss some parmesan on them as they come off.

  • Made some killer Oysters Rockefeller not long ago... shuck them.. and top with the good stuff at 400 degrees for 5 or so minutes 

    sauteed shallots, butter, garlic, spinach, green onions (and some leftover diced bacon) add that mixture to the food processor and blend in the bread crumbs and parm cheese until it makes a coarse green topping then spoon on top

    +1..on the Rockefeller...I fill my stainless steel pan with rock salt. Shuck and assemble Rockefeller and slow cook them indirect.

    Mmmm some good looking oysters! I like to add some crumbled bacon on top and finish with Parmesan!

    Thanks for all the tips. I roasted them at about 400 degrees. Ate some plain roasted and had some shucked and put garlic butter with Parmesan cheese and back on egg. They were all good.
