    I've cut up the bird (couple of years ago), only because I could not get it to fit whole on MBGE. Even chickens, chop shopped out works well, legs on first, then breasts and wings. Nothing is overdone. 
    Re the MadMax ice process, try using gel packs, they stay in place a bit better. They wash up quite well. The other alternative is cook the bird breast down for the first hour, then flip it to finish. No need to ice. SWMBO showed me this, when she cooks turkey in the big white kitchen clock.
