Mini Thighs Ala Mad Max

Got my new Mad Max turkey rub from Dizzy Pig today, and couldn't wait until I have time to do a turkey, so tried it on some chicken thighs on the Mini.
Served with roasted acorn squash. Good stuff

Way to rock out the mini, it looks great! How do you like the rub? What else would you put it on?

I like it a lot. Hope to try a turkey breast in a couple weeks, I think it would also be really nice on pork. As with most Dizzy Pig blends, it is very balanced, leans towards sage as the dominant herb, and maybe thyme. I went for about 40 minutes indirect 325ish (Woo Ring and pizza stone), rested the meat and settled the temp to 450 or so direct without the stone, then crisped up the skin for a few minutes.chuckytheegghead said:Cool. Thanks for the review. What kind of cooking set up are you using there? -
That's one thing I like about DP rubs, they are not salt heavy. You can always add more salt. Salt is cheap, hate rubs based on salt. Hpoe to try it soon.Basscat said:
