Deplorable tacos
Legume
Posts: 15,936
shrimp and baby lobster tails grilled hot and fast, seasoned with some chili+lime and then brushed with a charred tomatillo/grapefruit/cilantro/serrano sauce.
tried making homemade corn tortillas - great flavor, definitely need some practice though
tacos had some mango pico, cilantro and some more of the fresh roasted sauce

Whoa - great cook right there. Those finished pics belong in a food magazine. Most eggcellent.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

I was foing to make a smart a$$ comment about not wasting my time with such terrible food - but I can't. Dude, that's good stuff right there. I'm generally not a fan of fish tacos but I would tear those up. Well done.Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

Those tacos look amazing. I've tried making homemade tortillas before and they looked nothing like yours. Keep up the good work.Cheers,

Do you have a press or did you roll those tortillas out? I tried to hand press some and they looked like my pizzas. Amoeba like.
Those plated pics.... -
Thanks.
@theyolksonyou we will be purchasing a tortilla press this week. I wanted to try making scratch corn tortillas, but the wife executed. I read somewhere to just press them under a pie plate which sounded simple and apparently I made it sound too simple. not sure if I'll gift wrap the tortilla press or not.

@Legume Keep us posted on the tortillas. I want to know if you think the press is worth it for corn tortillas.Coleman, Texas

My father in-law has a tortilla press. The trick is to use a thick gauge plastic when you press them. Cut a heavy duty Ziplock in half and use that. He tried with parchment and everything else. Nothing worked until the heavy gauge plastic. FWIWCheers,
Jason

Thanks all - funny comments.
@NPHuskerFL I almost named this post deplorable 1%er tacos for the lobster and shrimp but didn't want to mix elections.
@SciAggie reading reviews now, will probably order a CI press. Plastic gets crap reviews, aluminum doesn't have the needed heft and the wood ones are very cool, but large and expensive. Making one would be cool, I found a video for that, but no time right now.
@caliking no real recipe. I got a rippin hot CI grid at lower woo level, charred four halved tomatillos, two halved and seeded serranos, one quartered (slices, not wedges) yellow onion and one very large, halved red grapefruit. Charred the grapefruit really well. Dumped all the veg in a blender with a pinch of salt, half bunch of cilantro and a couple of tablespoons of pepper vinegar. Squeezed all of the juice from the grapefruit and scooped a bunch of pulp as well. I think that's it.THANK YOU FOR YOUR ATTENTION TO THIS MATTER -

Just a thought, to help you avoid my mistake. Get the 8" press. I got the 6" and immediately ordered the 8". Never even used the 6"
Great looking tacos, very nice.
