Chicken Fajita Stuffed Peppers.

I have made these before but this is the first time I have made them since I got my egg back in may.

Here is the recipe I follow: http://www.cookingclassy.com/2014/09/chicken-fajita-stuffed-peppers/

Here are the adjustments I made:
  1. Light the egg and let it heat up to 350-400 and set up for direct cooking
  2. Seasoned the chicken breasts with some Mrs. Dash Fajita lime seasoning
  3. After I grilled the chicken I put in the platesetter and let the egg get to about 300 and threw in a few mesquite chunks.
  4. After I stuffed the peppers I went ahead and topped with cheese.
  5. Put the peppers on the egg for about 30 minutes.
You will more than likely have some leftover stuffing, what I do is put in a container and keep it in the fridge to use later. Maybe for nachos or tacos.
