Seared Tuna and a Pickeled Salad

Picked up a fresh Yellow Fin steak. Hit it with a mixture CT did a couple yrs ago (link at the bottom) then coated with white and black sesame seeds 
Hit the Mini at 650° direct for 1min per side and 30sec on the sides


Plated up with the sauce from CT post and some pickled red onion,radishes and cucumber

Definitely the best tuna I've ever made. Big shout out to @The Cen-Tex Smoker for posting his sauce.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
