Sunday Beef Ribs

Smoked a three  bone slab of beef ribs. Turned out amazing. Fork tender, beefy goodness.

Thanks everyone!  The wife and I loved them.  These will definitely be done again they were that good.  Rubbed with Meat Church Holy Cow.  Just enough to compliment, wanted the beefy goodness to shine through.  Took about 7 1/2 hours at 250-260.  These things were huge!  For reference, they were cooked on my XL.  Each bone was around a foot long!

@YEMTrey did you do these direct or indirect?  I pulled some out of the freezer--SRF Baby----for dinner tomorrow night and had bookmarked this page because yours looked so bloody good I knew I would want to hit you up for pointers on my first try at these bad boys!
Just bought an Egg?  Here is what you get to look forward to now:

Plate Setter, FlameBoss 200, Spider, PSWOO-CI, Additional Rig Shelf for dome cooking, Thermapen, iGrill2, Cast Iron, Blackstone, Cooking Accessories for the Blackstone, Cover for the Egg and the Blackstone, shopping for Rub like a fine wine or IPA, and a new fascination with lump and what brand is the best-all to be debated every Friday Night.  Next desires-Joetisceriie, Adjustable Rig, Grillmates, table and more eggs

Tiki these were done indirect. I'm sure you'll knock yours out of the park.  Can't wait to see pics!

I just have to try to guess time. This has been my biggest struggle by far. Never estimate it right.

How long do do you think these can FTC if I plan for an early done time vs actual eating time?  Kid has a basketball game at 430 which is the worse possible time for this cook and finishing temps.
