    I trim it, and use most for other dishes. Often put a piece on the grill w. the slab as a cooks treat when I check to see how the rest is doing.

    I'm with @qdenby.  It also serves well to chop up and add to beans.

    well, I've trimmed and tossed it a few times but I left it on tonight.

    I thought St Louis ribs were simply spareribs with that flap already cut off.  Am I mistaken?

    Sometimes I trim it. Sometimes I leave it. Sometimes I trim it, cut it into strips, batter and deep fry it. Just depends on my mood that day.

    I trim it, cook it on the side, and feed it to my two dogs.  Did I ever mention that ANY time and EVERY time I fire up the egg both of my dogs are by my side the entire time I'm cooking?

  • If you  trim it off and freeze it and save it till you have enough it makes a great chili.

    Chop the trimmed flap part and mix into baked beans!
