Lamb Rib Chops

Started with a rack of lamb, and then cut it into rib chops. Friend of mine in Australia gave me the idea which creates a crusty end cut on every piece. I made a rub out of fresh rosemary, thyme, oregano, a lot of garlic, spanish smoked paprika, and lemon juice with the zest. On the side I roasted some Roma tomatoes and a sweet onion which I sliced / crushed and put into some brown rice. I made a nice sauce out of Greek yogurt, chopped cucumber, more garlic, and lemon zest. Came out really good.

That looks fantastic!! Cooked them on the egg? If done to rare or even medium, I want a plate of them right now, regardless of how they were cooked.

One more pic on the grill. Made a two zone grill using a spider and a I/2 stone
When cut into individual chops a rack of lamb cooks really quickly. I don't even use a thermometer. Just toss em on at high moderate heat and they cook in just a few minutes. As soon as the fat starts to crust and bubble I pull them. Nice and moist and highly flavorful.Sea2Ski said:That looks fantastic!! Cooked them on the egg?
