Chicken halves, potatoes, and asparagus

I enjoy cooking doing the whole meal on the Egg. It's somewhat of a challenge, especially with timing.
Local place had a great deal on whole chickens ($.56 lb), so I bought a couple to freeze and a couple to cook. I decided to halve this one. About four hours before I rubbed with a homemade dressing I made a couple days ago (red wine vin, balsamic vin, canola, salt, pepper, honey, parsley, garlic pow, onion pow, season salt, and ranch seasoning).
Potatoes were scrubbed and dried well. Canola oil and liberal amounts of kosher salt.
Asparagus medley consisted of onion and sweet peppers. Canola oil, butter, salt, and pepper only.
All cooked at around 425°, indirect, for roughly 50 min.
Veggies were less. I let the CI get hot w/oil and butter, then added the veggies.
Pictures:
1 - Progress about 20-25 min in.

2 - Veggies in the CI.

3 - Chicken getting nice color

4 - Getting close to ready.

5 - Done

6 - I love taters on the Egg.

I'm in awe! I've never even attempted it. All too often the meat part of the meal is the only part I've really thought about, and I'm pretty happy with just bread and a salad as sides. My wife often makes sides. Amazing job of doing the whole thing on the Egg!tarheelmatt said:I enjoy cooking doing the whole meal on the Egg. It's somewhat of a challenge, especially with timing. -
It all looks good, but that chicken looks stellar! And I always forget to cook whole potatoes like that. Liberal on the salt, I like it...

Outstanding looking meal. Ya know...I've never done baked potatoes on the Egg before. Thought about it in the past, but for some reason I never did and nowadays I hardly eat them. Even half of one kills my blood sugar. Maybe I'll try it someday.

Try one - and just eat a half or even two bites. Baked spuds on the Egg are so good - baked or sweet. A little EVOO rub and sea salt rub and you're there.Griffin said:Outstanding looking meal. It was a long time before I did either, but man when I did, they were amazing! I did some cheesy potatoes not long ago where I Egged whole potatoes, cubed them, applied a liberal amount of ranch dressing on the bottom of a CI pan, added potatoes, then a bunch of cheese, bacon, and topped with green onions. It's a spin off a dish from T-Bones in Myrtle Beach.Griffin said:Outstanding looking meal. Ya know...I've never done baked potatoes on the Egg before.
