OT- Tacos El Pastor

Had some really good Tacos El Pastor last week and wanted to make some of my own.
Ingredients were the following:
Marinade
Pineapple
Onion
OJ
White Vinegar
Chile powder (I used ancho)
3 cloves of garlic
Salt
Oregano (I used fresh from the garden)
Cumin
Chipotle pepper and adobo sauce
Blend together with Nutribullet. Cover pork loin.
Served with tortillas (mine were homemade).
Lime wedges, onion, and cilantro to top off.
These were done on the Blackstone.
Pictures:
1 - Pork on. I originally was going to Egg them, so that's why they're in strips instead of cubed already.

2 - Pork and tortillas (this picture sucks, but wanted to show both items on the BS).

3 - Added more of the sauce near the end.

4 - Close up of the shells.

Okay, I got carried away with the pictures. I couldn't pick a favorite, so sorry.
In regards to the pork. Don't do like me. Start the marinade on Sunday and fail to cook until Tuesday. The pineapple really breaks down the pork in this case. Still good, just the texture was a little off to me.

Maybe its a phase I am going through, but I really have been enjoying ANYTHING in a flour or corn tortillia. That food looks insanely good. I think I could eat a dozen of those. Where is the Carona?Large, Medium, MiniMax, 36" Blackstone

It is very easy. It's all about the marinade/sauce really. Please don't make the mistake of leaving it in the marinade too long like I did. I'd say 30 min to 4 hours is plenty. If doing it on a BS, I recommend cubing the pork up before hand. If on the Egg, strips will do.Killit_and_Grillit said:Well done. I had a bad Pastor last night at a restaurant. For a week night cook, it was very easy to do. I got in the door at 5:10pm and we were eating by 6pm.------------------------------
