Pork Butt/Shoulder Capacity across the sizes?
Ambassador
Posts: 2
I'm in the market for my first egg after years of cooking on a WSM. I mostly do pork butts in the 8-9 pound range - (usually 2, but 4 on a semi regular basis.) I see Big Green Egg doesn't list pork butt capacity on their FAQs just the burgers, chicken, steak etc. amount. Can anyone give me a reasonable "pork butt capacity" across the sizes? From what I can tell the large is 2-3 (without absolutely stuffing them in there) and the XL is 4-6. Does this seem about right? Also, does anybody do pork shoulder on a small?

I've done 6 on my large, but it was stuffed. 4 Isn't a problem I would not think

I'd say (2) 8-10 lb butts on a large. Double pack from Sams or Costco....Large BGE - McDonald, PA

I hate it when I go to the kitchen for food and all I find are ingredients!

Yes I've read that thread. I would think some of the bark would be suffering with all that meat stacked on each other. -
I cook 6 - 9# average on my XLs all the time. L&S or Turbo no problems. All on one main grate at felt level.

i do 4 butts on my large at a time. (two of the packs from costco, each with 2 pieces about 7-8 lbs each. About 30# total.) three are like the base of a pyramid, and the 4th sits on a foil-wrapped brick. partway through the cook they get rotated to help with the bark.Chicago, IL - Large and Small BGE - Weber Gasser and Kettle

With the stock set up you can fit 2 without them touching. If you add a second level you can go 4. If you dont mind cramming them in you can do more. I have done close to 30 pounds on one grid and they turned out fine but you do sacrifice some bark.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

I can fit 4 9lbs on my XL's main cooking grid. Could always add a second level to get more.

i can do 4 on a large, not my favorite cook but if i were to be doing it often i would get an xl or two larges.
, my biggest cook on the large was 2 butts and 2 flats, about 32 pounds, the difficulty was getting a descent pit temp in there with all that cold meat screwing up the temp readings

Add a raised grid and you can do 3-4.Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.

16lbs on large... This is what it looks like for Olympic festivities on Sunday... -
Regarding the SGE- I routinely cook around an 8 lb pork butt on it-with plenty of lump to spare. I use a woo and stone from CGS as the internal hardware.
