Wings - a little different for me

I've never done the little separated ones before just the whole wing smoked. Going to smoke these in their pan with my made up Asian marinade then finish direct on the grill. Hopefully they turn out ok. Otherwise yesterday's brisky to the rescue.

No worries on the wings- I have not in a pan so no help there-but you should be able to eye-ball the grill finish. I would run raised direct after coming out of the bath and flip as needed to keep from burning the marinade. FWIW-
BTW- I always separate the drumettes from the flappers-generally go with two different rubs/sauces as it is easy to tell the difference.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

Well hot damn they turned out perfect. Great smoke flavor from the pan cook and great char from grill direct. Best of both worlds. And a clean fork for those counting.....
That's a brown rice quinoa thing from Costco with fresh Parmesan on top.

Im in the same boat as you. Always cook em whole because I'm lazy and don't want to separate them. Looks like you knocked these out of the park though! I'll have to give this a try

These were from the swmbo who bought them at Costco and I have never seen her clean a bone like I did tonight. We now have a new cooking method for all chicken but whole. Her words not mine. I'll take it.

Looks good to me. I use a pair of kitchen shears to tip and separate my wings. Doesn't take but a couple minutes to do a 15-wing pack.

I use a cleaver but I always separate my wings. I'm also a brine guy. 2 cups OJ, 1/4 c kosher, garlic, some heat, sweetener (honey, brown sugar, agave syrup). Dry well before hitting the grill. I usually toss with sauce lightly and serve with some on side.
