Pork Butt Fat Cap Trimmings?

I give them to my dogs.  They never have an objection to that decision.

Use it when you make sausage for extra fat content.

I use mine to make lard and cracklins. Just put about a quarter cup to half cup of water in a pot and throw your trimmings (I do a few butts at a time worth of fat). Cook on low to medium for a few hours checking it very so often till the pork far has fully rendered and the strips or squares of fat I added are all fried up nice and crunchy.
