Beef Short Rib Recipe...

anybody got one? Looking for something besides Korean short ribs...never made me before but tomorrow is the day!!

    I use worcestershire as a binder (not really needed but) and a low-sodium montreal steak seasoning.  On the BGE indirect at around 250*F +/- on the dome til they probe like buttah with a tooth-pick.  Looking at 5.5-7+ hours to the finish-line.   No foiling for me- I may spritz a couple of times with worcestershire if I remember.  Brisket on a stick.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    lousubcap had good advice.  They don't need foiling or liquid (braising).  Just low temperature for a long time (5-7 hours) and they are done when they pass the probing test.  I wish I was making some right  now but it will have to wait until next week.

    Cooking as we speak - 4 bones, Oakridge BBQ Competition Beef and Pork Rub, a few Hickory slivers w/ Rockwood, indirect at 250 for 4.5 hours, saucing w/ Daddy Sams for additional 30 minutes.

    They look great. I like to cook them uncut but it can sometimes be hard to find a butcher that will leave them as a slab.  Restaurant Depot is a good source for uncut ribs.

    @Shiff -  I have had great success at the local Kroger meat counter asking for uncut beef ribs.  I get the 4 bone chuck shorties uncut and the package generally weighs in around 7  + lbs.  FWIW-

    I'm sure I could find a local market that would sell them uncut but Restaurant Depot always has lots of them and they are significantly cheaper than any local market.  RD also has plate ribs and they have boneless chuck short ribs still as a slab.

    Plate Ribs and Chuck Short Ribs are 2 different cuts of beef.  Very similar but not the same.  A slab of chuck short ribs are usually 4 bones and plate ribs have 3.  Many of the BBQ restaurants that serve beef ribs are cooking plate ribs which are more expensive but probably a little more flavorful.

    Just had the plate ribs at $20 per pound. That was $40 per rib but they were worth every cent.
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd.
