i have two beef roasts. 4.1 and 4.6 lb. need for 4:30 tomorrow afternoon. Thinking about doing a reverse sear with them. Montreal Steak only then indirect at about 275? Until internal of 130? Then rest and run temp up to direct at 500 for 1-2 min per side. Thoughts? I am thinking the indirect should be about an hour as long as the meat has sat at room temp for about 30 min.

Here's very recent thread that may provide some information.
What temp to cook standing rib roast
BTW- sitting at room temp for 30 minutes has about as much impact as peeing in the ocean and raising sea-level FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
What kind of roast?“There are three rules that I live by: never get less than twelve hours sleep; never play cards with a guy who has the same first name as a city; and never get involved with a woman with a tattoo of a dagger on her body.”

Oops. Will probably take closer to 3 to get 130. I must have been in the sun to long today.

Sounds like a low and slow cook to me. Pot roast kinda cut, no?

I'd take them to 208ish so they pull apart and no sear. Good luck!“There are three rules that I live by: never get less than twelve hours sleep; never play cards with a guy who has the same first name as a city; and never get involved with a woman with a tattoo of a dagger on her body.”
