3 Rub 12 Wing Showdown...

My lovely wife took the kids up to the in-laws today. (Can I have an "AMEN!")  :prayer:
So I get to hang home and play, which meant taking the dog out for some exercise followed by egging!

I'm going to smoke some pork for the rainy 4th tomorrow, but decided to have a wing snack first with 3 new rubs I wanted to try.  Well, I have more than 3 new rubs to try, but didn't buy enough wings :grin: so we're just starting with 3.

Kept it simple and rubbed some wings with 2 new rubs that @dmchicago sent me as part of the exchange and a new one I got from the Savory spice shop.   I'm also drinking some rum.

I have to tell you that Pilar rum (Key West, FL) is excellent.  Had it at a tasting and grabbed a couple bottles when I saw it local.   Okay, here is my appetizer rubbed -

It'd be nice if I had RED, WHITE and BLUE for the 4th, but we'll have to settle with RED, GREEN and BLACK for <fill in the country>.  
And onto the grill.   350 raised direct until edible -

I'll let you know how they come out.  Unless I forget about them and burn them to a crisp.  The I'll conveniently forget about this post until tomorrow.  Like the wings....   :lol:

  • That Pilar is some good stuff. My dad and I scored a bunch of the bourbon aged single barrel of it about 6 months ago on his birthday weekend...it did not survive long.

    I've got $20 on the butcher's dust, but give us a review on that hard core carnivore. I just read that it has charcoal in the actual seasoning to help give it that color.

    Here are the results (Same orientation as earlier pic)-

    Notes as I tasted 'em -

    Carnivore - A nice charcoal taste, salty, good balanced overall flavor.   I like it.

    Greek - A bit brighter, Not a really strong flavor, needs more salt.  I think this would be better on a whole chicken or mixed with a little lemon and such.   Not bad, though.

    Butcher's Dust - You can absolutely taste the rub on this one.  The same thing I smelled in the can, is on the chicken.  That ancho chili taste and the sugar comes through strong.  Really surprisingly, actually, as I overcooked all the wings a bit, but the flavor here is solid.

    I ate half of them plain and then brought out the hot sauce to finish them off.   The charcoal and greek rub got lost in the hot sauce but the ancho still came through from the Butcher’s dust, even with hot sauce.  You were correct @Killit_and_Grillit , I think this is the standout of the three.

    So here is my one wing cook overview, for what it's worth;

    HARD CORE CARNIVORE Black charcoal rub-  This stuff would be great if you are cooking on a gas grill and want people to think you made it on the grill.  May even work in the oven.  Good stuff.

    MT. EOLUS GREEK Seasoning- wasted on wings.  Will be better on seafood or large cuts of chicken.   I like the taste, though.

    BUTCHER’s DUST Dry Rub- that sweet Ancho Chile taste is different than any other rubs I have.  You have to like the pepper flavor but it’s very good.  There is some coffee in the ingredients also, but I couldn’t taste it on wings.  This would be great on pork.  I'm thinking the next time I make Mojo Pork Carnitas...this is the rub I'll use.

    Where can I find the Butcher's Dust Dry rub? I went to the website of Salt&Time, however I did not find it for sale there :-(

    Ahhh, there are TWO ways to get it!

    1) Wait 11 months, enter the Rub & Sauce exchange, and hope you get @dmchicago.   :wink:

    2) Call or email Salt&Time.   He said this was sampled in the store so it's possibly a new one that hasn't made it onto the website yet. ?  I'm sure they'll ship it to you.
