Love both apple pie and grilled peaches & frozen yogurt

. Simple yet hard to beat. -
Mine is comfort food of triple chocolate and Kahlua cake served with Vanilla Bean Haagen-Dazs ice cream. Reason? I know I will be enjoying it for several days with no more effort fixing it!

@RRP you did that on the egg? Looks delish
-
Oh, many MANY times!!! In fact it has been one of my most popular signature cooks at all 14 Peoria Eggfests. The one pictured was one on which I sprinkled confection sugar which works much better after the cake has cooled, but at Eggfests there is no time wasted on cooling my cakes!CheeseheadinAZ said:@RRP you did that on the egg? Peaches are my favorite too. My twist is to turn them cut-side up (after establishing some grill marks), pierce the flesh (not the skin) with a fork, and pour a tablespoon or so of spiced rum, and sprinkle with brown or turbinado sugar.
C'mon, Peach Season!!!

Apple crumble, to me, is quintessential BGE.

I tried a pineapple upside down cake. Not my fav, but others said it was good. Cast iron dishes always have such a great crust.

We like things simple & tasty. When we have pizza night, we use tortillas. No fussing with dough and the crust is always thin & crispy. This is a dessert thread, right? Nutella tortilla pizza with banana or strawberry or both if you're weird like my daughter. Sprinkle with sweetened coconut because sprinkles are for winners.

DMW.. Willing to share specs on that pecan pie
-
@DMW that looks amazing. Im
with Duckdogdr I'd love to give it a try. @DuckDogDr while not nearly as pleasing to the eye I tried this pecan cobbler a week ago and it tasted great. Very easy.

@CheeseheadinAZ: Yes, but I'm not sure I'll find it, as I never bookmarked it and haven't made it in a while. The thing about the crumble is it's super easy, delicious and (relatively) healthy to boot! I'll see if I can find it...
-
@DMW: That pie is truly a thing of beauty.
-
@CheeseheadinAZ: This is somewhat similar to what I have previously. http://eggheadforum.com/discussion/1132922/apple-crisp
For a little extra moisture, acidity and sweetness, I sometimes toss the cut apples in lemon juice followed by a bit of white sugar.
Also, start the bake with a little foil on top (as to not over cook the crust and then remove foil (and even crank heat a tad) to get desired browning. -
Pineapple Upside Down Cake and Blueberry Buckle are my favs!

As promised last night...BTW the white is simply confection sugar sprinkled on and that is optional!CheeseheadinAZ said:Care to share the recipe?
Triple Chocolate and Kahlua Cake
Recipe courtesy of Ron Pratt aka RRP – Dunlap, IL
Questions? Feel free to email me directly at: ron.pat@comcast.net
1 box of Pillsbury Moist Supreme German Chocolate cake mix (forget the ingredients the box calls for - all you want is the mix)
1 4oz package if Jell-O brand instant chocolate pudding
6 oz chocolate chips (Herslhey’s Special Dark Semi-Sweet chips are the best!)
1 pint of sour cream (regular, not Light)
3/4 cup veggie oil
4 eggs (yolks + whites)
1/3 cup Kahlua
Set up the BGE for an indirect cook with plate setter inverted and grill sitting on legs.
Stabilize fire at 350 and make sure there is no smoke - this may take extra time but you really need the 350 stability plus the smoke free fire.
Mix all the ingredients well with a mixer as the batter is very thick!
Spray bundt pan with a baker's spray like Baker's Secret or Bake Ease even if your bundt pan is Teflon coated.
Bake at 350 for 50 to 55 minutes and test with a toothpick. I've baked this several times now and it takes me 60 to 63 minutes before the toothpick comes out clean.
Remove from BGE and let the cake settle and cool still in the bundt pan for at least 15 minutes - flip and it should fall out with ease. Let it cool longer yet - if you can at all so it will firm up...especially since the chocolate chips are still gooey at that warm stage! Suit yourself about an icing, but I like to let this cake speak for itself!
By the nature of the ingredients it is an extremely moist cake. BTW I think the cake is far better the next day and it really keeps quite well just covered on the counter! I hope yours comes out as well!

That looks really good, @RRP.
I am wondering about the Kahlua, is there a suitable substitute for it? How do you think the cake would taste if it wasn't in there?
I am not a fan of cooking with alcohol, and don't want it in the house. I know it cooks off and all, but I haven't had anything with alcohol in it for 20 years and would like to keep it that way. I barely survived the first round with it, I'm not sure a would survive a second round.
