Yes, the proscuitto and the pears work very well together and the arugla with the mos and goat cheese gave it a good palate to work on. I started out with extra virgin olive oil and added a liberal sprinkle of McCormicks Roasted Garlic Herb blend. Then the pears and then the cheese and arugula. One of our favorite pizzas. King Arthur flour markets a chili spiced honey called Bee's Knees, I tried making my own by infusing dried chili in honey. It worked pretty well and gave a nice little hint of sweet and hot. Just a little drizzle over the top really gives it a nice kick. Recommend the combination.

Awhile back I bought some King Arthur bread flour in the local Frys. Apparently their marketing strategy was to follow up by sending me a KA catalog. It worked because I was introduced to several of their speciality pizza flours. 00 clone, Semolina, and what they call their Pizza blend. This pie was made with the Pizza Blend, which I highly recommend. It comes with a dough recipe, is fairly easy, and really delivers flavor and wonderful texture. The edge crust where is rises up has a nice crust with and the inside has the consistency of a soft chewy bread stick. Really very good IMO.

Wow! Most of the pizzas around here that don't involve meat supplemented with meat hold little interest for me, but this looks and sounds phenomenal.

@keepervodeflame we've been using Mike's Hot Honey and love it, but have wanted to try making our own. Did you heat the honey at all when you added the chili flake? Did you strain it out after it sat for a while? Any hints you can give on proportions?THANK YOU FOR YOUR ATTENTION TO THIS MATTER

I made this my first batch on impulse so I wasn't too sophisticated. I didn't strain it so my 1st version does have bits of crushed chili in it. I have heard that bee's knees chili honey is simply one dried entact chili pepper submerged into the honey. I am going to order a bottle from King Arthur to check it out, since I need some pizza flour anyway. -
