Hot Dog Practice Session #2 - Pic Heavy

Practiced again last night for the Carrollton's Hottest Dog Contest 2016....my fast track to fame !!!!

Next trial will be on the egg. To cut down my prep time, and cut away at the learning curve, I stayed in the air conditioned "double top secret RNNL8 BBQ experimental back room"....(kitchen).

    Wowza!  I think I had a heart attack just looking at that.  Is that cilantro on top of the burger dog in the third pic?

    saluki2007...only Basil for garnish.

    I used Charred Pineapple Bourbon sauce and brown sugar mixture for the glaze.

    Can't wait until lunch today !!!

    Almost like a turducken on a bun.  Do you need a sub bun for that?  Is that ground beef or ground pork like a breakfast sausage? I am trying to come up with a catchy name for that.

    HoustonEgger ...I went with sauted onion, mushroom and Red Pepper Flakes on these !!  American Cheese.

    I need a cheese....or technique that will keep the cheese from running out the bottom, out of the center. I am not getting a good seal under the DDD when on the broiler pan. A lot of the cheese runs out into the bottom of the broiler pan.

    Any suggestions !!

    I don't know, man. I'm kinda with Jon Stewart...

    Try a different cheese - american will melt out of pretty much everything - go with a harder cheese like cheddar or maybe a bleu cheese? Less melting will keep the cheese around. Gouda would be gouda too.  =)

    slice the dog like a canoe, stuff the dog with cheese, then wrap your dog in the berger and bacon.  start the cook with the cheese side down on the grill, by the time its starting to melt your already fipping it over.

    Holy crap! I want one... Make that two. 

    Get a bigger hot dog. Core out he middle with a jalapeño coring tool or something. Save the core.  Stuff koolickle sliver or solid cheddar in the cavity. Slice off two pieces of the saved core to plug the dog at both ends.

    Might be able to core it with a stainless drinking straw if the wall thickness of the straw is thin.

    Freeze or almost freeze the cheese before you make up the dog.

    I believe I've seen Hillbilly Hotdog on Triple D......if Guy airs his visit you should have more than your fair chance to make it...he's created some long lines in the Houston area at local places.

    I did not even remember that when I named this monster "The Triple D" !  Now I feel bad....I thought it was original.

    I do not watch TV, but some guys I work with had told me about the show and the episode before I visited there.

    This Carrollton's Hottest Dog Contest came up unexpectedly after my visit. I failed to even connect the two until rummaging back through this thread the other day.

    Those look amzeballs! If you have any butchers near by that make their own go talk with them about hi-temp cheese. Our local meat market uses it in their brats and the cheese always stays put without melting too much.
