Caveman Question

I got a couple of big NY strips at the store and was thinking about finishing them off caveman style. How long should I expect on each side?

I've done caveman a few times. I flip every 30-45 seconds to prevent overcooking(bands of grey). Total of 90 to 120 seconds per side total. For me, an easier thing to do is to set a small grate right on the coals. Makes it a bit easier to get a more even crust.

You should be focused on certain thicknesses of steaks. You can control temp, only time. The thickness of the steak will determine how cooked the outer part is to the dead middle. -
Appreciate it, I ended up just doing a reverse sear because my wife decide she needed to come supervise and was pretty leery about throwing them straight on the fire. I will have to try another time. Haha.Las Vegas, NV

It turned out be easy. Just have long tongs and welder gloves.If there ever comes a time I get rabies, you are high on my Bitin’ List.
