We don't need no stinkin Blackstone......

(Only kidding, I have one and love it)......

Tonight some Mexican Quesadillas on the MiniMax..... using a round cast iron griddle. Before placing the griddle on top of the Woo, I had cooked some mesquite rubbed chicken thigh meat (not pictured)....and then diced. I heated up the griddle and the fun began. 
Threw some onion, peppers and mushrooms on....cooked them down......   I assembled it along with some Mexican cheese blend, and Hatch Valley Fire Roasted Green Chiles.. and folded...... 

sliced and served with house made salsa and sour cream. No plated pictures.....but it was good.

    Truth be known....I pulled the griddle off of the egg to let cool and shut down....and burnt my thumb in the process. Got all sideways at that point....and lost track of all things Egghead forum. I hope you and others will please show me some mercy tonight. In fact, I know that you all have to do that right often. I am so ashamed.

    You are right......but I was too lazy to get it out of the garage and hook up the propaine. Seemed like the simpliest approach at the time. Thumb will be ok.....not bad enough for a sick day tomorrow.

    There were a number of times that the situation called for me not going to work in my life.  During those few times I called in sick and told them I was suffering from "Posterior Glaucoma".

    Translation: "I just can't see my ass coming to work today!"  Try it.

    BTW, the cook looks awesome.  I do have a BS in my outdoor kitchen and something along those lines is in the plan for dinner very soon.  Thanks for the push in that direction.  So your work here is done and you can take the day off tomorrow.
