Few pizzas

My niece came over to eat with us tonight. Our little girl loves her and it's neat she comes over and does things with her. She's 17 and probably has other things she'd like to do.
Meat type with Italian sausage, bacon, pepperoni, and ham for my niece.
Ham and banana peppers for my wife.
Meat type with onion and mushrooms for me.
So far the best I've made to date. I'm really getting the dough dialed in taste wise and working with it. I was pleased.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

625g Lukewarm water
10g yeast
25g kosher salt
15g sugar
55g olive oil
920g AP flour (non-bleached) Gold Medal
1-3 tablespoons honey
Place water, yeast, and sugar to let proof. Once I saw action, I poured in KA mixer, with salt, olive oil.
Put mixer on 1-2 and started putting flour in. Let it go until incorporated and started creeping up the dough hook.
Grease bowl and place dough in and cover loosely for two hours. After two hours, punch down and place in fridge. You can use after the two hours, but it's tacky.
Form into four individual balls, and let come to room temp as much as possible. Form with fingers, toss to get thin, and start building.
It has a great crumb to it an not dense. I found measuring by weight has been a game changer and not messing with the dough too much.

@leemschu desired was 550° note sometimes was around 500°-515°, then crept up to 550°. Roughly 5-7 min. Note, there could likely be a hot spot. Once you know where that is, rotate the pie around to get even cooking.
