Adapting Mom's brisket recipe for the egg

My Mom's recipe for oven BBQ brisket is killer and just made better on the egg.  It's a wet brisket and unothrodox by most methods I've read on the Forum.  Here's the adaptation:
I used an 8 lb brisket, untrimmed and defatted the sauce.

Fire:  250 temp, mix of Fogo and Rockwood, added a little extra half way through cooking
Cooked indirect with plate setter and pan for drippings
Rubbed with Elder Ward rub right before setting on the grill

--Cooked for 4 hours, undisturbed and only opened at halfway point.
--After 4 hours, put in enamel pan, set on a sliced onion, covered with brown sugar, chili sauce, 1/2 beer and covered.  Cooked for another 4 hours.
-- Took of egg, wrapped in heavy foil and let rest for 2 hours.
--Defatted the sauce, added some homemade Bbq sauce and let thicken in pan on the egg.
Served after 2 hours.  It was better than in the oven, worked really well.  Leftovers are wonderful and now vacuum packed for eating soon.

    Looks great.
So how do you like your cooking grid? I've had mine for 3-4 years now.
One of the best things yet, I have bought for my large.

My Beautiful Wife has an oven recipe very similar to this, typically an all day cook. One of the many fascinating things about her is her ties to the old world. Many of her recipes, such as the this, are from her heritage, from France, Germany, Ireland and the Scottish Highlands. Some she readily will share, and she has a few, that will only be shared within the family after a blood oath. She is way to serious about this, I have the scars to prove it. J/K B) Or am I?
I am familiar with this cook, and I will try your version. I have only tried hers a couple times on the BGE, and it was dry.
    Thank you for posting.

@Hotch.  Like it a lot, especially being able to easily lift the side.
    Thx

@smbishop.  Yes, serve it sliced, just like Mom did.  Better the next day after I has soaked in the sauce.  :). Thx

@YukonRon.  Let me know how it works out.  The addition of Bbq  sauce to the liquid as thickener and flavor enhancer was important.  Also think that Elder Ward's recommendation not to season until right before putting in grill makes sense due salt and losing moistness.  Haha on the recipe sharing.  I have one recipe that was given to me by my Mom's best friend who is 94 years young that I am not allowed to share and I asked her again recently.  Bless her.

Take a look at the PSWOO from Tom at The Ceramic Grill Store. With the grid at 14 lbs, the Woo makes it so easy to lift out with the handels. And easy to use it both with and without the plate setter as the plate setter just slides in and out of the Woo and the grid is always at gasket level.
