Brisket

Cooked a 14 lb Costco Prime brisket yesterday for the crowd at my sons birthday party. It needed surprisingly little trimming. Put on at 5a, pulled and wrapped at 3p, served at 5p. It was actually still too hot when I served, either I over-insulated or needed to rest longer. It turned out reasonably well, and everyone attacked it...unfortunately no leftovers

    Looks mighty fine!  Just read today to let it rest and cool on the counter before putting in the cooler, going to try that today with mine...
