Morning y'all, cooking a turkey this afternoon and was wonder whether to go direct or indirect (grid wI'll be raised to about flet level). Also wonder what cooking temp people have had success at? Thanks!

Intriguing to spatchcock a turkey. I've done several chickens, but not a turkey. Did you brine the turkey? I do when I smoke them. I'd go raised, indirect around 375-400. Guessing 1.5-2 hours. Keep an eye on IT~ John - Formerly known as ColtsFan - https://www.instagram.com/hoosier_egger

Done turkeys many times. Spatchcock raised direct. 375-400 16lb turkey ~2.5-3 hours

What @robnybbq said!... Brine, 375 ~2.5 hrs depending on your own interpretation of "done", 165 for us... Best turkey EVER!
